As a yogurt substitute: Blend 1 banana and a handful of frozen raspberries or other berries with 1/2 cup oat milk until smooth. Top with ready-made granola, finish with your choice of toppings and voilà, you have a delicious and healthy breakfast that does not contain animal products.
2. Vegan smoked salmon
Vegan smoked salmon is a trend par excellence and is currently offered in every trendy coffee shop in the big city. If you want to make it yourself at home, you need two things in particular: carrots and smoke seasoning! Well done, it tastes deceptively authentic. In addition, carrots are full of vitamins and minerals and are therefore beneficial for health. The best? With a slight twist, the recipe is also for you if you don’t like fish.
Preparation: It is best to use large carrots and cut them into long thin strips with a vegetable peeler. Now cook the carrots for a few minutes until they soften. Then add the carrot strips liquid smoke (1 teaspoon per 3 carrots), a little soy sauce, lemon juice, a pinch of maple syrup and nori leaves. Just leave the last one out if you don’t want it to be so “fishy”. Then leave the smoked salmon in an airtight container in the refrigerator for at least one night.
As a basis: Vegan salmon tastes best on a bagel with cream cheese. Here too, it is very easy to find plant-based alternatives based on soy or oats. The range of supermarkets is constantly growing. If you want to be creative yourself, you can conjure up a delicious dipping sauce from your favorite natural tofu, garlic cloves and fresh herbs. 3. Vegan scrambled eggs

Preparation: The secret ingredients are Turmeric – for yellow color – and Kala Namak. Black salt gives the dish a slightly sulphurous aroma familiar from eggs. Simply crumble the tofu and mix in yeast flakes, pepper and paprika if needed. Then to the pan. If you prefer a little “loose”, you can add soy yogurt.

Crumble the rice cakes and mix with water until they have a “metal-like” consistency. Then season well, add tomato paste and finally break in finely chopped onion. It is best to leave this mixture in the refrigerator overnight so that the rice cakes can absorb the aroma of the onion and spices as well as possible.

5. Vegan Tomato Mozzarella
This Mediterranean classic is part of every good breakfast. But is it also vegan? Actually yes! To make a plant-based cheese substitute, you only need 5 ingredients – namely 2 tablespoons of psyllium husks, 100 g of cashews, 4 tablespoons of yeast flakes and the juice of half a lemon.
Preparation: Soak the flea seeds and cashews in different containers for at least 2 hours. After that, process all the ingredients in a blender into a cheese mass and season with pepper and salt. Pour into a mozzarella-shaped bowl and refrigerate overnight.
