Kohlrabi and apple soup recipe
Pleasant and creamy, extremely light and full of flavor – this kale and apple soup is ideal for a quick and easy summer dinner.
Ingredients for 4 servings:
- 600 grams of kale
- 300 grams of sour apples
- 1 medium onion, into small cubes
- 2 tablespoons olive oil
- 1 liter of vegetable broth
- 15 grams of spelled flour
- 90 grams of cream
- 40 grams of walnuts or other nuts of your choice
- salt and pepper to taste
Preparation:
- Wash the kale, cut the leaves and set aside.
- Peel a squash, grate it and cut it into small pieces.
- Peel apples, fourth, core and chop coarsely.
- Heat olive oil in a large saucepan over medium-high heat and fry the onions for 2-3 minutes.
- Put the backbone and apple pieces in a pot and simmer for 1-2 minutes.
- Pour in the spelled flour and vegetable broth and bring to a boil.
- Reduce heat and simmer under the lid for 20-25 minutes.
- In the meantime, roast the nuts without fat in a pan until golden brown and crispy for 5 minutes.
- Whip the cream with a hand blender to a strong foam.
- Puree the soup finely in a blender or with a simmer and season with salt and pepper.
- Garnish with cream and nuts and your noodle-apple soup is ready!

Kohlrabi recipes, which are easy and quick to prepare, are perfect for a quick weekend dinner. Stuffed peppers are familiar to all of us, but how about trying stuffed kale with minced meat? Full of flavors and truly delicious – a real dream!
Ingredients for 4 servings:
- 4 kale
- 1 medium onion, finely chopped
- 300 grams of minced beef
- 80 grams of rice
- 1 teaspoon paprika powder
- salt and pepper
Box:
- 200 ml of milk
- 250 grams of cream
- 20 grams of flour
- A little lemon juice
- salt and pepper
Preparation:
- Clean and peel the kale.
- Carefully dig under the knife.
- Prepare the rice for the filling according to the instructions on the package.
- Mix rice, minced beef and onion in a bowl and season with paprika, salt and pepper.
- Fill the backrest with the mixture.
- For the sauce, heat the flour in a large pot with a little oil and the glaze, stirring constantly with the milk and cream.
- Place the stuffed sauerkraut in a saucepan and simmer on low heat for 30-35 minutes.

Who wouldn’t like crispy french fries? Unfortunately, the original is anything but healthy and low in calories and therefore rather unsuitable for a healthy diet. What could be a healthier but equally tasty alternative to these low-carb fries? Only 400 calories and 8.5 net carbs per serving – sounds like a perfect keto dinner for us!
Ingredients for 3 servings:
- 350 grams of kale
- 100 grams of almond flour
- 80 grams of grated parmesan
- 1 egg
- salt and pepper to taste
Preparation:
- Preheat the oven to 200 degrees and line the baking sheet with parchment paper.
- Peel the back and remove the woody parts.
- Cut into thin strips and blot with kitchen paper.
- Mix the parmesan and almond flour in a bowl and whisk the egg salt in a separate bowl.
- Roll the backbone pieces first into the egg and then into the breadcrumbs.
- Brush with a little olive oil and put in the oven.
- After 10 minutes, turn once and bake for another 10 minutes until golden brown.
- Serve the low-carb french fries with the low-carb dip of your choice and enjoy!
A vegan nougat schnitzel recipe

Preparation:
- Peel a squash, grate it and cut it into slices about 0.5 cm thick.
- Bring the water to a boil and blanch the kale for 5 minutes.
- In a bowl, mix the herbs, coconut milk and water and mix into the dough.
- Put the flour and breadcrumbs in 2 plates and roll in the breadcrumbs first in the flour, then in the milk and finally in the breadcrumbs.
- Fry the sauerkraut in a schnitzel pan with a little oil until golden brown or bake in the oven at 180 degrees for 25 minutes.
