Elderberry juice is healthy – cold and warm
Elderberries contain important trace elements such as folic acid, iron and potassium. They are mainly known for their large number Vitamin C. Both cold juice and warm tea can help. If you want warm elderberry juice, heat it just a little – do not boil under any circumstances. Excessive heat destroys valuable ingredients.
Elderberry concentrates and powder should help even better, because some of the anthocyanins are destroyed by heating and pressing during juicing.

Collect berries for elderberry juice
You can make elderberry juice yourself. First you need berries. Elder bushes grow mainly in hedges and forest edges. The berries are ripe as coal black and can be picked from September to November.
There are different types of plywood:
- Black elder berries are healthy and edible (but only in cooked form).
- Dec Dwarf elderberries are poisonous.

It is best to pick whole rainberries and collect the sensitive berries in a basket or an old cloth bag, as the berries stain strongly. Since the berries are very sensitive, they should be processed quickly.
Do not pick elderberries from bushes near the road, as they may become contaminated with fine dust. Animals such as birds also live on the berries. So make sure you pick fewer berries on multiple bushes. In this way, you avoid picking the bushes completely empty and missing a significant part of the food for forest animals.
Very important: As tempting as it is to pick, eat it Do not eat berries raw! Eating them can cause nausea and vomiting because they contain toxin sambunigrin. However, it breaks down when heated.
Make your own elderberry juice
How to make elderberry juice yourself:
- Wash the elderberries carefully.
- Remove the berries from the stems with a fork or your hands. Discard unripe berries and stem remnants.
- Put the berries in a saucepan and add about an inch of water.
- Let the berries cook for about 15 minutes. They should be soft and wrinkled and easy to squeeze out. Don’t cook them too long or the important vitamins will break down.
- Filter the berries through an old kitchen towel. The best way to do this is to tie the corners to another pot and then pour over the berries and liquid so the juice can drip into the other pot.
- Squeeze the berry mixture well and let it drain overnight. If you don’t mind the pieces of fruit, you can also use a fleet lotte (a kitchen utensil).
Store elderberry juice:
- Fill elderberry juice into bottles or jars with screw lids.
- Place the jars in a pot of water. They must be two-thirds covered and must not be in direct contact with the bottom of the pot (a towel or wire rack will help).
- Let everything simmer for about 30 minutes (it should be about 70 degrees Celsius).
- When they have cooled, you can take the jars or bottles out of the pot. It is best to store elderberry juice in a dark, cool place.
