Ingredients for about 4 servings:

  • 6 tbsp olive oil
  • 700 g tomatoes, quartered
  • 3 shallots, sliced
  • 4 garlic cloves, peeled
  • 5 sprigs of rosemary
  • 5 sprigs of thyme
  • sea ​​salt
  • Pepper from the mill
  • 2 sea bass, fresh
  • 1 organic lemon (juice only)
  • 2 organic lemons, sliced

Approximately per serving:

  • 340 calories
  • 25 grams of fat
  • 9 grams of carbohydrates
  • 20 grams of protein

Preparation time:

  • about 20 minutes (plus 25 minutes baking and cooking time)

And it’s done like this:


  1. Preheat the oven to 200 degrees with top/bottom heat or 100 degrees with fan.
  2. Put the olive oil in a bowl. Add the tomatoes, shallots, garlic, 3 sprigs of rosemary and 3 sprigs of thyme. Season with salt and pepper and mix everything together.
  3. Rinse the fish inside and out, dry and sprinkle with lemon juice. Then salt and pepper. Place the remaining herbs and lemon slices in the belly.
  4. Drizzle the fish with a little olive oil. Fry them in oil in a large pan for 2 minutes on each side.
  5. Then spread the contents of the bowl evenly on the baking sheet and add the fish. Bake everything in the oven for about 25 minutes.
  6. Serve the fish with salad and fresh bread. Enjoy your meal!
