Brussels sprouts ingredients:

    Cauliflower

  • pepper






  • nutmeg

    Organic orange

  • clarified butter or rapeseed oil






  • a little honey

Heat the oven to 180 degrees. Clean the brussels sprouts, heat clarified butter or rapeseed oil in a pan and lightly fry the brussels sprouts. Season with salt, pepper and nutmeg. Wash the orange and peel off the peel with a chisel and squeeze out the juice. Put both in the pan. Add the squeezed orange halves, remaining orange juice and ginger. Mix everything well and then bake in the oven for at least 15 minutes. In the meantime, turn the Brussels sprouts and add a little more orange juice if necessary. Finally, mix in the honey.

Ingredients for mashed potatoes:

Peel the potatoes, cut them into slices and boil them in salted water until soft. Drain, reserving some of the cooking water. Puree the potatoes with a little boiling water, butter and rapeseed oil into a coarse mash, then season with turmeric, lime juice and zest, salt and a little sugar.

Ingredients for fried eggs:

Fry the eggs in butter, season with salt and pepper and serve with Brussels sprouts and mashed potatoes.
