Wash the potatoes well and cook for 20 minutes. Drain the water, peel and stone the avocado, and finely chop the wild garlic. Mash everything with oil and salt and season. If you cannot get wild garlic, you can use half a head of fresh garlic and fry it in a pan for a while.

Squeeze the grapefruit. Peel and finely chop the shallot. Sweat in vegetable oil. Clean the fennel, cut off the stem and slice or dice the vegetables finely. Add to the onions. Sweat briefly. Add maple syrup and grapefruit juice and bring to a simmer. taste.

Cut the fillets, salt and fry with vegetable oil and crushed garlic. Turn and let rest.
