Peel and finely chop the onion. Also chop beets and gherkins. Drain the herring fillets and cut into large pieces. Put in a bowl with onions, beets and cucumbers. Mix sour cream with yogurt and vinegar and pour over the salad. Mix all ingredients thoroughly.
Wash, peel an apple and remove the cores. Cut the flesh into small cubes and stir immediately into the salad so that they do not turn brown. Season the herring salad with salt and pepper and cool until served. Sprinkle with chopped dill before serving.
The salad tastes especially good if it has been left to stand for a long time. Therefore, it is best to prepare it for 1-2 days and store it in the refrigerator with a lid. To improve a little, you can decorate the salad with hard-boiled eggs, gherkins or toasted brown bread cubes.
