Recipe: Spaghetti with salmon and lemon sauce

Allow about 30 minutes to prepare this dish.

Ingredients for four servings:

  • 400 grams of spaghetti
  • salt
  • 300 g of salmon fillet
  • 1 bunch of dill
  • 4 egg yolks
  • Grated zest of 1 unwaxed lemon
  • 1 tablespoon of lemon juice
  • 4 tablespoons of white wine
  • 1 teaspoon of sugar
  • pepper
  • 120 grams of butter
  • Cook spaghetti in plenty of boiling salted water according to package directions.
  • First cut the salmon into strips, then into bite-sized pieces. Wash dill, shake dry and chop finely.
  • Beat egg yolks, lemon zest and juice, white wine, sugar, salt and pepper in a pot. Then whisk it all together over low heat until you get a thick cream.
  • Cut the ice-cold butter into cubes and gradually mix into the sauce. Break in the dill and season the sauce if necessary.
  • Drain the spaghetti and return it to the pot when wet. Mix the salmon pieces into the noodles and toss them gently for three minutes. Serve the pasta with the sauce.

These salmon noodles get to the table even faster. Because the preparation is very simple and takes exactly as long as the noodles are cooked. Al dente of course. The nice thing is that everyone can help with the cooking.

Ingredients for four people:

  • 1 package of spaghetti
  • 1 medium zucchini
  • 1 packet of smoked salmon
  • 1 organic lemon
  • 1 clove of garlic
  • 1 cup sour cream
  • 1 tablespoon of olive oil, some chives, salt and pepper
  • Cook the noodles in boiling salted water until al dente. Cut the courgettes into small pieces and fry them with garlic in olive oil. Salt the whole thing.
  • Do not cut the smoked salmon into small pieces, as it will fall apart anyway, and add to the zucchini. Now turn the temperature very low, the salmon will cook in no time.
  • Now, while still on low heat, carefully stir in the sour cream and a little lemon zest until everything is hot. Season with salt and pepper to taste.
  • Add the drained pasta and mix everything together.
