Colorful red wine spaghetti comes to our table when the longing for Italy is great again.
When you’re really hungry, nothing beats a quick pasta. And colorful red wine spaghetti is a wonderful change and doesn’t require a lot of work. Be sure to try it.
Ingredients for 2 servings:
200 grams of spaghetti
1 red onion
1 clove of garlic
4 sprigs of parsley
20 grams of butter
2 tbsp olive oil
125 ml red wine, dry
150 ml of vegetable broth
50 g of parmesan
2 tablespoons mozzarella, grated
Salt pepper
And it’s done like this:
Boil the spaghetti in a large pot of salted water for 2-3 minutes. Then put in a colander and let it drain.
Cut the red onion into thin strips. Peel and finely chop the garlic clove. Wash the parsley, shake dry and roughly chop the leaves.
Heat the butter and olive oil in a shallow pot and fry the onion and garlic. Add the wine, stock, Parmesan and 2 tablespoons of finely chopped parsley.
Add the pasta and cook until al dente, about 8-10 minutes, stirring occasionally. Add the remaining parsley leaves. Season with salt and pepper. Serve with freshly grated mozzarella and enjoy.
